Thinly slice the pork belly.
Tip: If you freeze the pork belly then it’ll be much easier to slice!
Thinly slice the eggplant.
Thinly slice some carrot as well.
Add 2 tbsp miso paste.
Add 1.5 tbsp soy sauce.
Add 1.5 tbsp sake.
Add 1.5 tbsp mirin.
Add 2 tsp sugar.
Add 1 tbsp water.
Add in some diced ginger.
Add some diced garlic.
Mix well.
Heat up a pan on medium heat.
Add in the pork belly.
Stir and cook for 7-10 minutes, or until golden brown.
Tip: If you like the pork belly meaty, shorten the cooking time.
Remove some of the oil from the pan.
Add in the eggplants.
Tip: Add some olive oil if it gets too dry.
Add in the carrots.
Add in the sauce.
Stir and cook for 2 minutes.
Add in some green onion.
Add about 1/2 cup of water, cover with lid and cook for 5 minutes.
