Gather olive oil, butter, chicken thighs, salt, onion, garlic, carrots, bell pepper, tomato sauce, fideua, chicken broth, and green peas.
Melt 30 g of butter in a pan.
Season 3 chicken thighs with salt.
Turn chicken thighs over and cover with a lid.
Chop 1 onion.
Fry the chopped onion in the oil where the chicken was fried.
Chop 2 cloves of garlic.
Add the chopped garlic to the onions.
Chop 4 small carrots.
Chop 1 bell pepper.
Add 50 ml of tomato sauce to the pan.
Add 200 g of fideua to the pan.
Fry the fideua together with the vegetables for 2-3 minutes.
Add 400 ml of chicken broth to the pan.
Tip: If using unsalted broth, add salt to taste.
Cook over medium heat for 3 minutes.
Add 30 grams of green peas.
Place the already roasted chicken thighs on top.
Bake in a preheated oven at 180ºC for 10 minutes.
Chop 1 bunch of parsley or cilantro.
